Chinese Cuisine Chef

We are currently seeking experienced Chinese Cuisine Chefs to join our kitchen team. Multiple full-time positions are available, with a guaranteed minimum of 30 hours per week.

The Chinese Cuisine Chefs will be responsible for planning, preparing, cooking and presenting Chinese cuisine to a high professional standard. The role also involves maintaining recipe and portion standards, supervising kitchen operations, supporting menu planning, controlling food quality, estimating food and supply requirements, training kitchen staff, and ensuring compliance with food safety and hygiene requirements.

Key tasks and responsibilities

  • Plan and prepare a range of Chinese cuisine dishes, including stir-fried dishes, braised dishes, steamed dishes, soups, sauces and other traditional Chinese menu items.
  • Develop, review and maintain recipes, portion standards and cooking procedures to ensure consistent food quality, taste and presentation.
  • Prepare, season, cook and present Chinese cuisine using appropriate Chinese cooking techniques, including wok cooking, steaming, roasting, braising and sauce preparation.
  • Monitor the quality of dishes at all stages of preparation, cooking and presentation to ensure consistency and professional standards.
  • Inspect food ingredients and raw materials to ensure they meet required quality, freshness and food safety standards before use.
  • Plan menus and assist with estimating food, labour and supply requirements, including ordering food supplies and supporting stock control based on customer demand and business needs.
  • Supervise and coordinate kitchen staff during food preparation and service, including allocating duties and monitoring food quality and timing.
  • Demonstrate Chinese cooking techniques and advise kitchen staff on cooking procedures, food presentation, hygiene practices and safe kitchen procedures.
  • Train and guide kitchen staff in Chinese cuisine preparation techniques, food presentation, hygiene practices and safe kitchen procedures.
  • Monitor stock levels, minimise food wastage, and ensure food is stored correctly in accordance with food safety and hygiene requirements.

The successful candidates must have

  • At least two years of relevant work experience, or a relevant NZQF Level 5 or above qualification.
  • Knowledge of Chinese cuisine, ingredients, cooking methods and commercial kitchen operations.
  • Ability to prepare Chinese dishes to a consistent professional standard.
  • Kitchen supervision and coordination skills.
  • Understanding of food safety, hygiene and workplace health and safety requirements.
  • Ability to work efficiently in a busy commercial kitchen environment.
  • Good communication skills and ability to work as part of a team.
  • Reliable, responsible and able to work independently when required.
